Chicken and Pesto Sandwich
Instructions

In a heatproof bowl pour enough boiling water over tomatoes to cover and let stand for 15 minutes, or until soft. Drain tomatoes and pat dry.

Transfer pesto to a bowl, stir in olives and sun dried tomatoes.

Cut loaf diagonally into 4 pieces and halve each piece horizontally. Spread pesto on cut sides of bread and make 4 sandwiches with chicken, tomatoes, cheese, and onions.

Ingredients

1/2 cup Belmondo Pesto Genovese

10 ounces smoked chicken breast, sliced thin

1 long loaf (about 20 inches) French or Italian bread

1/4 cup thin sliced onions

6 ounces thin sliced Cheddar cheese

3 ounces sun dried tomatoes, chopped fine

1/4 cup Kalamata or other brine-cured black olives, pitted and chopped fine
