Pesto Chicken
Instructions

Preheat oven to 400 °F. Line baking sheet with heavy duty foil.

Season the chicken with salt and pepper. Place chicken and pesto in medium bowl; toss to coat. Place chicken in prepared baking sheet and cover with aluminum foil. NOTE: The chicken could be refrigerated overnight if desired.

Bake for 20 to 25 minutes or until chicken is no longer pink in center.

Season the tomatoes with salt. Remove chicken from oven; top with Parmesan cheese, tomatoes and mozzarella cheese. Bake for an additional 3 to 5 minutes or until cheese is melted.

1/2 cup Belmondo Pesto Genovese

6 boneless, skinless chicken breast halves

2 plum tomatoes sliced thinly

4 tablespoons grated Parmesan cheese

3 cups shredded mozzarella cheese

Salt and pepper
