Pesto Salmon Fillets stuffed with Spinach
Instructions

Preheat oven to 400 degrees F. Make a slit on the center of each salmon fillet and scoop out some of the excess salmon. Season each fillet with the salt and pepper.

In a bowl, combine the spinach, pesto, tomatoes, pine nuts and Parmesan cheese. Spoon the mixture into each slit.

Place the fillets on a broiler pan coated with cooking spray. Sprinkle olive oil on the top of the fillets. Roast for 8 to 10 minutes or until the fish is flaky.

4 tablespoons Belmondo Pesto Genovese

4 (5 oz. each) salmon fillets

10 oz. package baby spinach, coarsely chopped

1 tablespoon chopped sundried tomatoes packed in oil

3 tablespoons grated Parmesan cheese

1 tablespoon pine nuts

2 tablespoons olive oil

Pinch of salt and pepper
