I love to eat any dish with chickpeas; some of my favorites are hummus, chickpeas and pasta soup, and chickpeas salad. For the Moroccan stew with chickpeas I used dry chickpeas. For this recipe you can use dry or canned chick peas. Dry chickpeas need to be soaked overnight and cook either in a slow cooker or an Instant pot. Can chickpeas I prefer to drain the liquid and rinse them well before using them.
There was a period in my life when I decided to go vegan so I checked out several vegan cook books from the library. One of the books that stood out was “The Vegan Table: 200 Unforgettable Recipes for Entertaining Every Guest at Every Occasion” I tried a few recipes from this book including a version of this Moroccan stew.
